Biko

Biko
(Sweet Glutinous Rice Cake)
Sweet, soft, sticky rice cake. Cook in sweet rice or sometimes called glutinous
rice, coconut milk, brown sugar and condensed milk for toppings.

Ingredients:
  • 4 cups sweet rice (glutinous rice)
  • 4 cups water for  rice cooking
  • 2 cup coconut milk
  • 1 lb. brown sugar
  • Lemon rind
  • Condensed milk
Directions :
  • Cook the rice in the rice cooker.
  • Boil the coconut milk, grate the lemon skin and mix with sugar.
  • Keep stirring until it gets very sticky.
  • Scoop some caramel juice for toppings.
  • Add the milk into the caramel juice and mix well.
  • Pour the cook rice into the cooking pan with the caramel, mix well till blended.
  • Pour the rice in a baking pan and spread with the toppings.
  • Place in the middle rack and bake for 20 mins.
  • Put coconut curd (latik) and serve.
Cooking Tips :
  1. Black sweet rice or a combination of white sweet rice can be use in making biko. If using Black sweet rice, soak in water for 20-30 mins.
  2. Canned ripe jackfruit can be added for additional taste. (Add the juice in water for rice cooking and pour the jackfruit with the rice into the caramel juice.
  3. Pandan can be added in rice cooking for a sweet scented smell.

(Sweet Banana Spring Roll)


The crisp sugar coated spring roll with banana and ripe jackfruit filling are a
popular afternoon snack across the Philippines. The easy to make recipe.

Ingredients :
  • 3 banana plantain ( cut lengthwise)
  • Brown Sugar
  • Ripe jackfruit
  • Spring roll wrappers
  • Vegetable oil
Directions :
  • Cut bananas lengthwise. 
  • Dip in brown sugar,  bananas must be fully covered with sugar.
  • Place bananas in the center of wrapper and top with ripe jackfruit, fold edges, and then roll.
  • In a frying pan, heat vegetable oil, sprinkle some brown sugar and wait to float.
  • Deep fry all banana rolls until golden brown and sugar is melted.

Ginataang Bilo-Bilo

Ginataang Bilo-Bilo
(Glutinous Rice Ball in Coconut Milk)

Filipino snack or dessert using glutinous rice flour to make a rice ball
dumplings and cook with coconut milk and mix with tapioca pearl, yam, sugar
 and other fruits like ripe Jackfruit and banana.


Ingredients :
  • 1 large sweet potatoes, peeled and cubed
  • 250 grms canned jackfruit (langka), sliced
  • 3 ripe banana plantain
  • 1/2 cup cooked tapioca pearls or sago
  • 1 can (400ml) coconut milk
  • 1 can (560ml) coconut cream
  • 1/2 cup white sugar
  • Dumplings: 1 cup glutinous rice flour 1/2 cup water
Directions :
  • In a large saucepan, pour in coconut milk, add in the sugar and pandan flavor stir and bring to boil.
  • Lower the heat into medium and add in the sweet potatoes cubes and and banana simmer for 5 minutes.
  • Add rice balls and keep on stirring to prevent them from sticking to each other. rice balls will float once they are cooked .
  • Add Tapioca pearl (sago) and last is the ripe jackfruit.
  • When the rice ball turns silky soft, add the coconut crean, simmer for 2-3 mins and serve.
How to make glutinous rice ball (bilo-bilo)
  1. Combine the glutinous rice flour and water together.
  2. Mix till well combine and has a consistency of soft play dough.
  3. Take a small bit of dough and place in the centre of your left palm and with your right palm over on top, gently rotate your right hand clockwise. Shape into balls measuring ¼ inch in diameter .
